Breakfast crumpets

Crumpets are a delicious way to start the morning.

Ingredients

  • 1 cup cake flour
  • 1 cup nutty wheat flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • 2 cups milk
  • 2 eggs, beaten
  • ¼ cup oil
  • Cinnamon

Method

  • Mix together the flour, baking powder, salt and sugar in a large bowl.
  • In a separate bowl beat the eggs and add oil and milk.
  • Add the egg mixture to the flour mixture and stir just enough to get rid of most of the lumps.
  • Pour a large spoonful onto a greased frying pan.
  • Cook until crumpets get bubbles on top and edges are slightly browned – about two to three minutes.
  • Flip them over and cook for another two to three minutes until golden brown.
  • Serve warm with honey, syrup or sugar mixed with cinnamon.
