Breakfast crumpets

Ingredients
- 1 cup cake flour
- 1 cup nutty wheat flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons sugar
- 2 cups milk
- 2 eggs, beaten
- ¼ cup oil
- Cinnamon
Method
- Mix together the flour, baking powder, salt and sugar in a large bowl.
- In a separate bowl beat the eggs and add oil and milk.
- Add the egg mixture to the flour mixture and stir just enough to get rid of most of the lumps.
- Pour a large spoonful onto a greased frying pan.
- Cook until crumpets get bubbles on top and edges are slightly browned – about two to three minutes.
- Flip them over and cook for another two to three minutes until golden brown.
- Serve warm with honey, syrup or sugar mixed with cinnamon.
