Valentine vanilla cupcakes

Ingredients

Cupcakes

  • 125g self-raising flour
  • 125g castor sugar
  • 125g soft butter
  • 2 large eggs
  • 1 teaspoon vanilla essence
  • 1 tablespoon milk
  • Cookie cups.

Icing

  • 250g soft butter
  • 250g icing sugar
  • 1 teaspoon vanilla essence
  • Food colouring

Method

Cupcakes

  • Pre-heat the oven to 200°C.
  • Put all the ingredients except the milk into a bowl and mix with a wooden spoon.
  • Add the milk until the batter is of a dropping consistency.
  • Divide the dough evenly between 12 cookie cups.
  • Bake for 15-20 minutes.

Icing

  • Beat ingredients until
    smooth.
  • Divide icing into two
    batches.
  • Colour one batch red and
    one batch pink.
  • Once cooled, ice the
    cupcakes.
