Valentine vanilla cupcakes

Cupcakes
- 125g self-raising flour
- 125g castor sugar
- 125g soft butter
- 2 large eggs
- 1 teaspoon vanilla essence
- 1 tablespoon milk
- Cookie cups.
Icing
- 250g soft butter
- 250g icing sugar
- 1 teaspoon vanilla essence
- Food colouring
Method
Cupcakes
- Pre-heat the oven to 200°C.
- Put all the ingredients except the milk into a bowl and mix with a wooden spoon.
- Add the milk until the batter is of a dropping consistency.
- Divide the dough evenly between 12 cookie cups.
- Bake for 15-20 minutes.
Icing
- Beat ingredients until
smooth. - Divide icing into two
batches. - Colour one batch red and
one batch pink. - Once cooled, ice the
cupcakes.
